Spinach Brioche

With golden, flaky pastry, a creamy dill spread, and tender spinach, this recipe is just as beautiful as it is delicious.

🥘 Ingredients (24 to 36 bites)
1 package puff pastry (350 g to 400 g)
8 cups chopped spinach
For the dill spread
Cream cheese (220 g to 300 g)
2 to 3 tbsp chopped fresh dill
2 tsp Les Savoureux Dill Pickle seasoning
½ tsp Les Savoureux Lemon Pepper Salt
½ red onion, finely diced
2 tbsp milk or cream
Freshly ground pepper, to taste
🍳 Preparation
Preheat the oven to 400°F.
Place the cream cheese in a food processor or in a bowl.
Warm the milk or cream in the microwave for a few seconds, then add it to the cream cheese. Whisk well until smooth.
Add the fresh dill, our Dill Pickle seasoning, our Lemon Pepper seasoning, the diced red onion, and a little freshly ground pepper. Mix well, then set aside.
In a skillet, cook the spinach until wilted. Drain off any excess liquid, then set aside.
On a clean, lightly floured work surface, roll out the puff pastry until it is about ½ cm thick.
Spread the cream cheese mixture evenly over the entire surface of the pastry.
Top with the spinach.
Roll the pastry onto itself to form a log, like a sushi roll.
You can place it in the fridge or freezer for a few hours before slicing to make cutting easier, or slice it right away if you prefer.
Cut into rounds about 1 cm thick.
Place the bites on a baking sheet lined with parchment paper or a silicone mat.
For a more golden finish, beat 1 egg yolk with 1 tsp milk and brush each piece before baking.
Bake for 10 to 15 minutes, or until the puff pastry is golden and completely crisp.
Serve immediately, or let cool and serve later.
