Indian-Style Couscous with Grilled Halloumi

The couscous becomes incredibly tasty with our Les Savoureux Indian and Curry-Coconut blends, the vegetables add freshness and texture, and the grilled Halloumi brings the whole dish together beautifully.

🥘 Ingredients (4 to 6 servings)
4 to 5 cups cooked couscous
2 tbsp Les Savoureux Indian seasoning
1 tbsp Les Savoureux Curry-Coconut seasoning
1 tbsp Les Savoureux Greek seasoning
1 cup prepared chicken broth (see directions on the jar)
Salt and pepper, to taste
1 zucchini, sliced into half-moons
1 bell pepper, diced
½ onion, diced
1 block of Halloumi, or more if desired
1 can chickpeas, rinsed
1 tsp fresh citrus juice (lime or lemon)
Fresh herbs, to taste (parsley or cilantro)
🍳 Preparation
Prepare all your ingredients and make sure everything is within reach.
Cook the couscous according to the package directions, then set aside.
Cut the zucchini, bell pepper, and onion, then set aside.
Preheat the oven to 400°F. You can also use the BBQ or a frying pan to cook the Halloumi.
Slice the Halloumi into thick pieces and place them on a baking sheet lined with a silicone mat or parchment paper. If using the BBQ, simply place the slices on a plate until ready to grill.
Sprinkle our Greek seasoning on the cheese, to taste. (about 1 to 2 tbsp)
Bake for 7 to 8 minutes at 400°F, then broil for 2 minutes to lightly brown it. You can also grill it on the BBQ or cook it in a pan.
Rinse the chickpeas under cold water until there is no more foam.
In a large skillet, add a drizzle of oil. Sauté the onions, then season lightly with salt and pepper.
Add the bell peppers, zucchini, and chickpeas. Cook for 1 to 3 minutes.
Add the Indian and Curry-Coconut seasonings, then stir well to coat the vegetables and chickpeas.
Pour in the chicken broth, bring to a boil, and let simmer until the liquid has reduced by half.
Add the cooked couscous, mix well, then turn off the heat.
Add the citrus juice, stir one last time, then serve with the grilled Halloumi on top.
Garnish with fresh herbs to taste.
