COUSCOUS SALAD
Couscous Salad, fresh, nourishing, and perfect for lunches
This is exactly the kind of recipe we love to make ahead so we always have flavorful and colorful lunches ready to go 😍
With crisp vegetables, light couscous, golden tofu, and our Les Savoureux Greek and Cajun blends, this salad is fresh, satisfying, and absolutely delicious.
It is the kind of dish we love just as much for a quick lunch as for a light meal that still feels complete.

🥘 Ingredients (about 8 cups | 4 to 6 lunch portions)
Storage: 5 days in the fridge
1 ½ cups dry couscous
Hot water, according to package directions
2 Lebanese cucumbers, diced
½ cup radishes, cut into thin strips
1 cup cherry tomatoes, halved
1 small red onion or 1 French shallot, thinly sliced
¼ cup chopped fresh herbs of your choice
(parsley, mint, or dill)
1 block firm tofu (454 g)
A drizzle of oil
2 tsp our Les Savoureux Cajun blend
Salt and pepper, to taste
¼ cup olive oil
2 tbsp white balsamic vinegar
1 tbsp our Les Savoureux Greek blend
Salt and pepper, to taste
🍳 Preparation
Cook the couscous according to the package directions.
Once cooked, fluff it with a fork, then place it in the freezer for a few minutes while you prepare the rest of the recipe so it cools more quickly.
Cut the block of tofu into cubes, about the same size as feta cubes in a Greek salad.
Place the cubes in a container.
In a large skillet, add a generous drizzle of oil and heat for a few minutes.
When the skillet is hot, add half of the tofu cubes, then season with salt and pepper.
Cook until golden, about 3 to 5 minutes, then add 1 tsp of our Cajun blend.
Remove the tofu from the skillet and set it aside on a plate or in a dish.
Repeat with the remaining tofu.
Once all the tofu is cooked, place it in the refrigerator for a few minutes so it cools down.
Cut all the vegetables and place them in a large mixing bowl.
Add the cooled couscous, olive oil, white balsamic vinegar, our Greek blend, and salt and pepper.
Then add the cooled tofu and mix everything well.
Serve right away or refrigerate until ready to serve.

💡 Savoureux tip
You can replace the tofu with 1 cup of cubed feta, or remove both the tofu and feta for a version without protein.
When you buy feta, keep the brine and use it to marinate a block of tofu. It is surprisingly close to feta in a salad.
