Shrimp with Coconut Curry or Indian Seasoning
A simple, simple, SIMPLE recipe!!!
... But oh so DELICIOUS :-)
You know, that quick little weeknight recipe that still makes you feel like you are eating a beautifully prepared weekend dinner!
So do not hesitate to serve this dish to guests, everyone will enjoy it!
Few ingredients and tons of FLAVOR!
INGREDIENTS
1 bag of shrimp
(or another protein: chicken, pork, tofu, scallops)
2 generous tbsp of the Coconut Curry or Indian blend
1 cup tomato sauce
1 can of coconut cream or coconut milk
(the cream will make the sauce richer and creamier)
1 clove garlic, minced
1 tbsp fresh grated ginger
Leeks or onion or French shallot
Salt and pepper, to taste
Fresh cilantro or fresh parsley, to taste
PREPARATION
Cook the shrimp in a skillet with a little oil. Set aside.
In the same skillet, sauté the leek
(or onion/shallot).
Add the garlic and ginger, along with the Coconut Curry or Indian spice blend.
Stir well and quickly so the spices do not burn.
Add the tomato sauce and coconut cream. Mix well.
Add salt and pepper. Let simmer and reduce for about 10 minutes.
Add the shrimp.
Serve over rice, cauliflower rice, rice vermicelli, kelp noodles, or konjac noodles.
Garnish with fresh cilantro or fresh parsley and a lime wedge.
