Zero-Waste Roasted Vegetable Soup with Italian Blend
At Les Savoureux, we love anti-waste recipes.
This soup was born from a fridge-cleanout / freezer-cleanout / pantry-cleanout challenge… and the result is incredibly delicious.
A few tired cherry tomatoes, peppers that are not as crisp as they used to be, an onion and garlic that are just waiting to be cooked, a Boursin forgotten at the back of the fridge…
You bring it all together, toss in our Italian Blend, and just like that: into the oven it goes to create the base for an ultra comforting soup 😋
🥕 Ingredients (variable depending on what you have on hand)
Cherry tomatoes
(even if they are looking a little rough 😉)
Red peppers or other colors
1 onion
A few garlic cloves
1 Boursin cheese
(or garlic and fine herbs cheese)
Olive oil
Les Savoureux Italian Blend
Salt and pepper, to taste
Vegetable broth or water
(as needed)
🍳 Preparation
Preheat the oven to 400°F (205°C).
In a large oven-safe baking dish, place all the vegetables, roughly chopped.
Add the Boursin cheese in the center.
Drizzle generously with olive oil, then season with Les Savoureux Italian Blend, salt, and pepper.
Bake for 30 to 40 minutes, until the vegetables are well roasted, tender, and slightly caramelized.
Transfer everything to a blender
(or use an immersion blender).
Add a little broth or water if needed, then blend until you reach your desired texture: smooth or more rustic, it is up to you.
Taste, adjust the seasoning, and enjoy 🥄
