AUTUMN SPICE MUFFINS
đ It's harvest time, do you have zucchini waiting to be cooked?
This is a great option for you!
Ingredients:
- 3/4 cup unsalted butter
- 1/4 to 1/2 cup of sugar or sweetener of your choice
- 4 eggs
- 1 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/4 tsp. salt
- 2 tbsp. baking powder
- 100g grated zucchini
- 2 to 3 tbsp. dessert spice
Preparation
- Preheat the oven to 350F
- Grease your muffin cups (with butter!)
- Beat the butter with the sugar until smooth
- Add the eggs, 1 at a time and mix well
- In another bowl, mix the flours, salt, baking powder and spices.
- Incorporates the dry ingredients into the wet ingredients. Beat to obtain a smooth mixture.
- Add the zucchini and mix again.
- Pour into muffin tins and bake for 30 minutes.
Savor it hot with a good knob of butter
