Mama Mia how I love this Italian vinaigrette!
It will keep for about 2 weeks in the fridge. On the other hand, if you make it only with olive oil, it will tend to freeze in the fridge. So I make it half olive oil and half avocado oil, so it doesn't freeze and it gives it a milder taste.
