A good salad of "petates"!!!
It's always a hit on buffets, or as an accompaniment to a quick meal at home or camping.
You prepare it a little in advance so that it takes on flavor, and hop you take it out of the fridge when you need it.
I offer you a funky version with our Mechant Spicy seasoning!
800g baby potato (I like to make it with roasted radishes, for a low carb version)
200g bacon cut into strips
1/3 cup relish
1 small minced red onion
1 cup small cherry tomatoes, halved
1 stalk of celery, finely chopped
2 green onions, minced
1/2 cup chopped flat-leaf parsley
1/3 cup mayonnaise
1 C. old fashioned mustard
1 C. Dijon mustard
2 tbsp. tablespoon red wine vinegar
1 C. water
1 C. Mechant Spicy mix (or you can use the BBQ mix if you want a different taste and a little less spicy).
Combine all ingredients and refrigerate.
The salad will keep for a few days in the fridge.
