Roasted Tomato Soup – Les Savoureux
A velvety, cozy tomato soup made with our star blends: Tomato & Basil and Roasted Garlic. Oven-roasting the tomatoes brings out their natural sweetness, while the seasoned feta topping adds the perfect WOW factor.
Ingredients (4 servings):
• 8 to 10 fresh tomatoes (about 1.2 kg), quartered
• 1 large onion, quartered
• 3 tbsp olive oil
• 2 tbsp Tomato & Basil Blend – Les Savoureux
• 1 tbsp Roasted Garlic Blend – Les Savoureux
• ¼ cup cream (15% or 35%)
• Salt and pepper, to taste
Topping
• ½ cup crumbled feta
• 1 tsp extra Tomato & Basil Blend – Les Savoureux
• A drizzle of spicy oil (optional)
Preparation Steps:
1. Roast the vegetables
Preheat the oven to 400°F (200°C).
Place the tomatoes and onion in a 13 x 9 baking dish.
Drizzle with olive oil, then sprinkle with the Tomato & Basil Blend and the Roasted Garlic Blend.
Toss directly in the dish to coat everything well.
Roast for 30–35 minutes, until the tomatoes are juicy and lightly caramelized.
2. Blend the soup
Transfer the roasted vegetables to a blender.
Blend until smooth (or leave a bit of texture if you prefer).
Add the cream and blend again.
Adjust seasoning with salt and pepper.
3. Prepare the topping
In a small bowl, mix the crumbled feta with 1 tsp of the Tomato & Basil Blend.
Taste… it’s already delicious.
4. Serve with the WOW finish
Pour the hot soup into bowls.
Top with a spoonful of the seasoned feta.
Finish with a drizzle of spicy oil if desired.
