THE SAVORY PULLED PORK
This pulled pork served on slices of grilled sweet potato, garnished with crumbled feta, chopped green onions and cilantro... The flavors explode in your mouth, it's delicious!!!!
This recipe will be equally good with the Mexican, Cajun or Southwestern blend.
These mixtures give an exquisite spicy touch!
INGREDIENTS
1 pork roast, around 1 kg
Juice and zest of one lime
1 bunch of fresh coriander
1 can of tomato
3 tbsp. Cajun , Mexican , or Southwestern blend (if you don't like it too spicy, go easy on the Mexican).
1/2 cup of water
2 tbsp. tablespoons of our Chicken Broth Style mix
Salt and pepper to taste
PREPARATION
Preheat oven to 350.
In a casserole dish, grill the pork roast on all sides and add the rest of the ingredients.
Place in the oven for 3 hours. Once out of the oven, shred the pork.
Serve on slices of grilled sweet potato (slices of about 1cm, oiled, salted and peppered and that you have tenderized and grilled in the oven).
On the sweet potato tenches, place the pulled pork and garnish with crumbled feta cheese, chopped green onions and fresh cilantro.
I also like, for a complete meal for my boys, to cook whole sweet potatoes in the oven, in aluminum foil.
Once cooked, I cut it in half and stuff it with the same ingredients.
I also like to serve it on a slice of grilled cabbage, does that surprise you? 😂
