GRILLED VEGETABLE BURRATA
I LOVE grilled vegetables, my god it's good!
On the BBQ it's even better đ
Add to that a burrata and vinaigrette... It's to die for!
INGREDIENTS
Your choice of vegetables that grill deliciously on the BBQ.
I like to use: Zuchini halved lengthwise, Portobello mushrooms whole or halved, red peppers halved, whole asparagus.
Pickled onions ( over here to see the recipe ).
A few fresh tomatoes in season (it adds a nice freshness to the dish).
A burrata.
For the peppers, cut them in half and core them. Place them on the BBQ grill and let them grill well (or even burn) on each side. Once well grilled, remove them from the BBQ and place them in an airtight dish for a few minutes. The heat will create moisture which will cause the skin to easily peel off the pepper.
Oil the other vegetables and place them on the BBQ grill and grill them for a few minutes on each side.
In a serving dish, place the grilled vegetables, fresh tomatoes, and marinated onions.
Place the burrata on top and drizzle with the Italian vinaigrette .
