CRISPY CHICKEN
Here is a chicken recipe worthy of rotisseries, but super-easy to make, keto and gluten-free!
* for 8 pieces (4 thighs and 4 drumsticks)
In a bowl, mix
- 3 cups almond flour
- 3 tbsp. heaping tablespoons of organic BBQ seasoning
In another bowl, mix
- 4 beaten eggs
- 1/2 buttermilk
* to make homemade, mix 2 tsp lemon juice with 1 cup milk or cream and let sit for 5 minutes. ** It's normal that it coagulates ;)
Coat your piece of chicken in the spiced flour, then in the egg mixture, and again in the spiced flour.
Place it on a rack placed on a baking sheet.
*To have tested it, it gives better results than directly on parchment paper
Melt 1/4 cup of butter, and gently brush the tops of your pieces with a pastry brush. This is what will fine-tune the wow effect of the crispiness.
Bake at 400˚F for 1 hour, or until the chicken fibers pull apart with a fork.
Accompanied by a deliciouscreamy house coleslaw !

PS: If you have to reheat it the next day, I suggest you do it in the oven, in order to keep the crispy texture.
