CHICKEN CROQUETTES
This recipe for chicken croquettes is a recipe that helps out on weeknights.
We double make this recipe on the weekend, eat one that night (can't wait!) and freeze the other, still raw.
So, one Tuesday evening in a hurry, we "swing" it in the oven, as if we had bought commercial, but 100 times better for your health đ
đ You can season them either with BBQ seasonings or with Vegetable seasonings
For 4 people
- 2 chicken breasts, sliced ââin half then cut into small 3-4 cm cubes, (commercial size croquettes)
In a bowl, mix
- 2 cups of almond flour
- 3 tbsp. heaping tablespoons of BBQ seasoning
Or
- 2 cups of almond flour
- 3 tbsp. heaping tablespoons of vegetable seasoning
In another bowl, mix
- 4 beaten eggs
- 1 cup buttermilk
* to make homemade, mix 2 tsp lemon juice with 1 cup milk or cream and let sit for 5 minutes. ** It's normal that it coagulates ;)
Coat your piece of chicken spiced flour, then the egg mixture, and again spiced flour.
Place it on a rack placed on a baking sheet.
*To have tested it, it gives better results than directly on parchment paper
melt 1/4 cup of butter, and brush gently the top of your pieces with a kitchen brush. This is what will fine-tune the wow effect of the crispiness.
Bake 20 to 25 minutes at 400ËF, or until the fibers of the chicken pull apart with a fork.
For the sauce
Blend
- 1 cup of your favorite mayonnaise
- 2 tablespoons of lemon juice
- 2 tablespoons of water
- 1 heaping tablespoon of Les Savoureux organic BBQ seasoning
Or
- 1 cup of your favorite mayonnaise
- 2 tablespoons of lemon juice
- 2 tablespoons of water
- 1 heaping tablespoon of Les Savoureux organic vegetable seasoning
Accompanied by a delicious homemade creamy coleslaw !
