GINGERBREAD COOKIES
I came across this recipe by chance on the web, and what a surprise it was to see that it’s made with our Les Savoureux DESSERT spice blend 😱

INGREDIENTS
COOKIES

2 tbsp Les Savoureux Dessert Spice Blend

½ cup coconut flour

2 cups almond flour
-
½ cup brown sweetener of choice

2 tsp baking powder
-
1 pinch of salt
-
1 tsp xanthan gum
-
2 eggs, at room temperature

3.5 oz melted butter
-
¼ cup maple syrup of your choice
-
1 tsp vanilla extract
ICING
-
½ egg white
-
1 tsp lemon juice
-
½ cup powdered sweetener of your choice
PREPARATION
Preheat the oven to 320°F (160°C). Line a baking sheet with parchment paper.
Sift the flours into a large bowl, then add the dessert spice blend and the remaining dry ingredients.
In another bowl, combine the maple syrup, vanilla extract, melted butter, and eggs. Mix well, then add to the dry ingredients. Stir until everything is fully incorporated.
Knead the dough with your hands and form two balls. Wrap in plastic wrap and chill for 15 minutes in the freezer or 1 hour in the refrigerator.
Between two sheets of parchment paper, roll out the dough to about ½ cm (¼ inch) thick.
Use cookie cutters to create shapes.
Bake for 15 minutes or until the cookies are lightly golden. Remove from the oven and let cool completely.
Meanwhile, prepare the icing.
In a small bowl, mix the egg white, lemon juice, and powdered sweetener until smooth.
Using a piping bag, decorate the cookies.
