Here is a recipe that I borrowed from the beautiful Émilie, from Famille Kéto ❤
Its original recipe was strawberry and chocolate flavored.
Here is now the version with organic dessert spices!
For 12 Cookies
1 cup almond flour
1/2 cup coconut flour
2 tbsp dessert spice
2 tbsp. tablespoons Erythritol
4 tbsp. tbsp shredded coconut
1 C. baking powder
1/4 tsp. xanthan gum
pinch of salt
1/4 cup room temperature butter
2 tsp vanilla extract
1 tbsp lemon juice
Preheat the crazy to 350F.
Mix all the dry ingredients in a large bowl. To book.
In a large bowl, dab the butter. Gradually add eggs, vanilla and lemon juice.
Add the dry ingredients to the wet ingredients and beat until well blended.
Model the cookies by making a ball and flattening it then place on a cookie sheet covered with parchment paper
Cook for 20 minutes.
Last step, try to make sure there's still some left over when it's time for dessert!
PS: It also makes a great lunch!
