I don't know about you, but I LOVE griddle meals. It's simple, quick and so tasty! We garroche the meat that we have on hand, the vegetables forgotten in the bottom of the fridge, and of course one of our spice mixes, Voila! Dinner is done!
Also, if your freezer is optimal, it will take you 3 minutes to do.
2 beautiful cod fillets or white fish of your choice
1 box of cherry tomatoes
½ red onion, sliced
½ cup kalamata olives (or more to taste)
1 cup crumbled feta cheese
1 to 2 tablespoons of the Greek or Italian mixture
(I put 2 for maximum flavor)
Olive or avocado oil
Salt and pepper
Start the oven at 350
Place the fillets on a cookie sheet lined with parchment paper, season with salt and pepper.
In a bowl, place the rest of the ingredients and mix well. Place the mixture on the cod fillets and bake for about 20 minutes or until the cod is well cooked.
