If it's comforting a mashed cauliflower!
This recipe is really decadent with the addition of sharp cheddar cheese :-)
1 head of medium sized cauliflower
2 cups grated sharp cheddar
1/2 cup cream
1 to 2 tbsp. tablespoon of our ROASTED ONION
Salt and pepper
Wash and cut the cauliflower head into florets.
Place in a skillet or cauldron with the cream and the ROASTED ONION mixture. Cover and cook over low heat for about 10 minutes. The goal is to cook the cauliflower "steam" and not in water so that it is not waterlogged and this makes an extremely liquid puree.
Place the cauliflower in the food processor or an electric mixer and add the cheddar cheese. Pulse until desired consistency.
Taste and adjust seasoning to taste.
