CORDON BLEU STYLE MEATBALLS
Really simple recipe, but really tasty!
We like dumplings the rest of us :-)
INGREDIENTS
1 lb ground chicken (makes about 7 meatballs)
1/2 cup cubed cooked ham
1 large tbsp. tablespoon ranch mix
Swiss cheese cubes (number of cubes depending on the number of balls)
Breadcrumbs (bread of your choice, pork rinds or panko)
Salt to taste
PREPARATION
In a bowl, combine all the ingredients except the cheese.
Put a little oil in your hands to prevent the chicken from sticking while making the meatballs. Roll balls about the size of a golf ball and insert a cube of cheese inside.
Roll meatballs in breadcrumbs.
Place the meatballs on a cookie sheet and spray them with oil to crisp them up.
Bake at 400 for about 20 minutes or in the Air Fryer for about 15 minutes.
Turn the meatballs halfway through cooking.
Serve with spicy mayo.
I like to make my spicy mayo with one of our hot sauces (1 cup mayonnaise and about 1 tbsp hot sauce, depending on your taste).
You can also make a mayo with our salt-free mixes.
