CHRISTMAS LOG
Want to serve a Yule log to your guests?
Mine didn't survive until the reception, we ate it for dinner all week hahaha
It is super nutritious! Full of proteins, good fats and moreover, without sugar!
The icing on the Sunday? You don't have a thousand ingredients to take out and measure, all the spices are in Les Savoureux dessert seasonings 😉
Ingredients
The cake roll
1 cup almond flour
2 tbsp. tablespoons melted butter
3 large eggs
1/4 cup psyllium powder
1/4 cup coconut milk
1/4 cup sour cream (I used the 14%)
1/4 cup erythritol (or less, to taste)
1 C. baking powder
1 heaping tsp dessert spice
Icing
- 8 oz. of cream cheese
- 8 tbsp. butter
- 1/4 cup sour cream
- 1/4 cup of Erythritol (or less, to taste)
- 1/2 tsp. dessert seasoning
PREPARATION
Combine all the dry ingredients for the cake in a bowl, then mix gently while adding the wet ingredients.Spread on parchment paper placed on a cookie sheet. Go as thin as possible, but don't stress, I didn't make it to the edge haha
Bake at 350F for 12 to 15 minutes, then let cool.
While it cooks, mix the ingredients for the frosting with an electric mixer.
Once your cake has cooled, spread your frosting. Roll gently as tight as possible.
*If you are a novice like me, it might crack a little bit. Hide it with whipped cream, sprinkle some spice on top, and voila! < /div>
