🌽 Grilled Corn Cajun Salsa

💥 Perfect as a taco topping, served with tortilla chips, in a poke bowl… or on our famous stuffed sweet potato 🤤
🛒 Ingredients (for about 4 servings):

2 cups grilled corn
(approx. 3 cobs or frozen corn, roasted in a pan) -
1 red bell pepper, finely diced

1 jalapeño, seeded and finely chopped (adjust to taste)

1 handful fresh cilantro, chopped

2 tbsp olive oil
-
Juice of 1 lime

1 tbsp Cajun blend
-
1 tbsp Roasted Onion blend

Salt to taste (optional)
👨🍳 Instructions:
Grill the corn
👉 Using fresh corn cobs?
Grill directly on the BBQ or in a cast iron skillet until nicely charred.
Let cool, then cut off the kernels.
👉 Using frozen corn?
Sauté in a dry skillet over medium-high heat (no oil) until golden brown and toasty.
Mix your salsa
In a large bowl, combine the grilled corn, red bell pepper, jalapeño, and chopped cilantro.
Add olive oil, lime juice, Cajun blend, and Roasted Onion blend.
Toss everything together, taste, and adjust seasoning if needed.
