Mexican-Style Stuffed Sweet Potato

🔥 A flavor explosion in one potato: sweet, spicy, crunchy, creamy... it’s all there!
Ingredients (for 2 generous servings)

2 medium sweet potatoes

250 g ground beef
-
½ cup tomato sauce
-
1 tbsp of our Mexican spice blend
-
1 serving of grilled corn salsa (recipe here)
-
1 serving of lime-cilantro sour cream sauce (recipe here)

A drizzle of olive oil
-
Fresh cilantro for garnish (optional)
Preparation steps:

Cook the sweet potatoes
Preheat your oven to 400°F (200°C).
Pierce the sweet potatoes with a fork, place them on a baking sheet, and bake for 45 to 60 minutes, or until they are fork-tender. -
Prepare the beef
In a hot skillet with a drizzle of oil, cook the ground beef.
Add Les Savoureux’s Mexican spice blend and cook until the meat is nicely browned and fragrant.
Stir in the tomato sauce and let simmer for 4 to 5 minutes to reduce slightly. -
Assemble the potatoes
Once the sweet potatoes are cooked, make a slit down the center (without cutting all the way through).
Gently mash the flesh with a fork to create space for the filling. -
Generously stuff
Fill each potato with the seasoned beef.
Top with a generous spoonful of grilled corn salsa.
Finish with a good drizzle of lime-cilantro sour cream sauce. -
Finish and serve
Sprinkle with fresh cilantro, add a bit of lime zest if desired… and enjoy every bite!
