Les Savoureux Meatball Stew
Makes about 6–8 servings
Yields ~30 to 36 meatballs
A cozy, deeply flavorful Quebec classic—made even better with our Grand-Mère Blend and Roasted Onion. Tender, loose-textured meatballs, a silky brown gravy, and a rich pork-shank broth… this is pure comfort in a bowl.
Ingredients
For the broth (pork shanks)
• 4 to 6 pork shanks
• 10 cups water
• 1 large onion, roughly chopped
• Salt and pepper, to taste
For the meatballs
• 1 kg (2.2 lb) ground pork
• 2 tbsp Grandmother's Blend — Les Savoureux
• 1 tbsp Roasted Onion — Les Savoureux
• Salt and pepper
For the gravy
• 1 cup toasted flour (farine grillée)
• Approx. 4 cups pork-shank broth (adjust for desired thickness)
Preparation
1. Prepare the broth
Place the pork shanks in a large pot with water, salt, pepper, and the chopped onion.
Bring to a boil, then reduce to a gentle simmer for 1h30 to 2 hours, until the broth is rich and flavorful.
Remove the shanks and strain the broth.
Keep the broth warm — or refrigerate it to let the fat solidify and remove it easily.
2. Make the meatballs
In a bowl, combine the ground pork, Grand-Mère Blend, Roasted Onion, salt and pepper.
Form small, loose meatballs, about 1 inch in size.
💡 Savoureux Tip for tender meatballs:
Don’t press the meat tightly. Roll the meatballs very gently so they stay airy and soft. Imperfect = perfect!
3. Brown the meatballs
Heat a bit of oil in a skillet.
Brown the meatballs just enough to give them color — they will finish cooking in the sauce.
4. Make the gravy
In a large pot, add 1 cup toasted flour.
Gradually whisk in about 4 cups of hot broth, adding it slowly to avoid lumps.
Adjust the amount of broth depending on your preferred texture:
• More broth = lighter sauce
• Less broth = thicker sauce
Bring to a gentle simmer until the gravy thickens.
Taste and adjust seasoning (salt, pepper, Grand-Mère Blend) if needed.
5. Combine and simmer
Add the browned meatballs to the gravy.
Simmer gently for 25–30 minutes, allowing the flavors to meld and the meatballs to cook through.
