½ cup freshly grated parmesan
-
Your favorite Caesar dressing (recipe here)
For the pancetta
-
6 to 8 slices pancetta
For the homemade croutons
-
½ baguette, cut into small cubes
-
½ cup melted butter
-
3 tbsp honey
-
Salt and pepper
Preparation Steps
1. Make the honey croutons
Cut the baguette into small cubes.
In a large skillet, melt the butter over medium heat.
Add the bread cubes and toss well so they’re fully coated.
Toast for 6 to 8 minutes, stirring often, until golden and crispy.
Once crisp, drizzle in the honey and mix well to coat.
Remove from heat once caramelized.
Let cool 1 minute so they become extra crunchy.
2. Cook the pancetta
In a hot skillet (or in the oven), cook the pancetta slices for 2 to 3 minutes per side, until crispy.
Transfer to a paper towel to remove excess fat.
3. Assemble the salad
In a large bowl, toss the chopped romaine with the Caesar dressing.
Add the honey croutons and parmesan.
Top with crispy pancetta slices.
4. Serve immediately
Serve right away while everything is still crunchy and fresh. Enjoy!
