Tourtière
A comforting, classic Quebec meat pie elevated with our Grand-Mère Blend, roasted onion, and roasted garlic. Tender, juicy and full of holiday-worthy flavor!
Ingredients
For the filling

About 4 lbs ground pork (you can also mix pork, veal, and beef)

2 medium potatoes, peeled and cut into small cubes

3 cups beef broth

Salt and pepper to taste (personally, I like it generously peppered!)

2 or 3 pie crusts (bottom + top)

Butter or oil for cooking
🍳 Preparation
1. Cook the meat
Heat a large pot over medium heat with a bit of butter or oil.
Add the ground pork and cook, breaking it apart with a spoon.
2. Add the seasonings
When the meat is almost fully cooked, add the Roasted Onion, Roasted Garlic, Grand-Mère Blend, salt, and pepper.
Cook for 2 minutes to bloom the flavors.
3. Add potatoes & broth
Add the diced potatoes, then pour in the beef broth.
Simmer gently for 20–25 minutes, until the potatoes are tender and most of the liquid has reduced.
(If you want a thicker filling, let it reduce a little longer.)
Taste and adjust seasoning.
Remove from heat and let the mixture cool—this makes assembly easier.
4. Assemble the pies
Preheat oven to 400°F (200°C).
Place a bottom crust in each pie plate.
Divide the filling into 2 or 3 pies depending on the size.
Cover with the top crust, seal the edges, and cut a small steam vent in the center.
Brush with milk or beaten egg for a golden finish if desired.
5. Bake
Bake for 40–45 minutes, or until the crust is beautifully golden.
Let sit 10 minutes before slicing… and enjoy the incredible aroma!
