Butternut Squash & Apple Soup

A comforting, velvety soup that tastes like autumn in every spoonful 🍂
Butternut squash, apples, and butter create a silky-smooth base, perfectly enhanced by our Roasted Onion and Roasted Garlic blends.
Ingredients (makes about 4 servings)
• 1 medium butternut squash (about 1 kg / 2 lb), peeled, seeded, and cubed
• 2 apples (Cortland, Lobo, or Honeycrisp), peeled and chopped
• ¼ cup butter (don’t be shy — it adds incredible flavor!)
• 2 tbsp Les Savoureux Roasted Onion Blend
• 1 tsp Les Savoureux Roasted Garlic Blend
• 3 cups Chicken Broth (made with our Les Savoureux Chicken Broth Blend)
• 1 tsp fresh thyme leaves (or a bit more to taste)
• Salt and pepper to taste (use our Les Savoureux Garlic Scape Salt)
Preparation Steps

Prep for the oven
Preheat the oven to 350°F (175°C).
In a large oven-safe dish, combine the squash, apples, butter, Roasted Onion and Roasted Garlic blends, broth, and thyme.
Season with salt and pepper, then cover. -
Roast gently
Bake for 40–45 minutes, or until the squash is soft and fragrant. -
Blend until smooth
Transfer everything to a food processor or blender.
Add the cooking broth and blend until smooth and creamy, adjusting the texture to your liking. -
Taste and enjoy
Taste and adjust the seasoning — a touch of Roasted Garlic or a small knob of butter makes all the difference.
To serve, top with a few fresh apple cubes and a sprinkle of Les Savoureux Smoked Salt.
